  • Cook Time: 30 minutes
  • Total Time: 40 minutes

Instructions

  • Preheat the oven to 375°F.
  • Toss the sliced potatoes with the oil, salt, and pepper in a large mixing bowl.
  • Place the potatoes on a baking sheet in a single layer and bake for 20-25 minutes, or until golden brown and crispy.
  • Remove from the oven and top with shredded cheese and bacon crumbles.
  • Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  • Sour cream and chopped chives on top.
  • Serve immediately.
