Instructions

  • Preheat the oven to 200 degrees Celsius.
  • In a large mixing bowl, combine the beef, paprika, cumin, salt, and pepper.
  • In a frying pan over medium heat, heat 1 tablespoon olive oil.
  • Cook for 3-4 minutes, or until the beef is browned.
  • Set the beef aside after removing it from the pan.
  • Add the eggplant slices and another tablespoon of olive oil to the pan.
  • Cook for about 2-3 minutes per side, or until lightly browned.
  • Set the eggplant aside after removing it from the pan.
  • Place the tortillas on a baking sheet and bake for 2-3 minutes, or until warmed through.
  • Place a tortilla on each plate to start.
  • Distribute the beef and eggplant evenly among the tortillas.
  • Sprinkle chopped tomatoes and crumbled soft cheese on top of each tortilla.
  • Serve right away.
